It is not necessarily accurate to say flash pasteurization is not as commonly used in the United States. There are many small dairy farms that sell their milk to the public that use this method to pasteurize their milk. Temperature ranges from 145° F to 212° F, with times from 30 minutes to 0.01 seconds.
