The Carlsberg scientists
"The Carlsberg scientists are generally acknowledged[by whom?] as having jump-started the entire field of molecular biology."

Fermentation not caused by "a secretion of yeast cells"
According to WP:Zymase, "Buchner hypothesized that yeast cells secrete proteins into their environment in order to ferment sugars. It was later shown that fermentation occurs inside the yeast cells."
