In order:

1. From MOS: "Use the style chosen for the article: unspaced em dash or spaced en dash. The style was already standardized on unspaced emdashes with the exception of the references, where I copied info like website names directly without changes.
2. Ah, you're correct. That supersedes ENGVAR. I'll address that now.
3. I had no problem with the wikifying! I am only concerned with the formatting changes and reductions to a reader's experience.

Unrelated, but you know quite a few Wikipedia policies and guidelines already for someone with 80 edits! Have you edited Wikipedia before under any other account names?
