Re the specific question, should Homarus gammarus be moved to a common name? You will often find that this type of question has already been discussed on the talk page of the article in question. In this case, at Talk:Homarus gammarus#Should this article be moved to Common lobster? Not exactly a long exchange, but the obvious arguments are already given here: we title the article by what is most commonly employed in the reliable references that are in use for sourcing the article. In this case that is the scientific rather than any of the common names, so that would indicate that the name should not be changed. (Other considerations will apply for other topics, e.g. if there are multiple organisms that share the same common name, etc.)

In any case, to determine whether an article should be moved, you should start a discussion on that article's talk page first and get the opinion of multiple other editors, then act according to consensus.
