– No need to disambiguate for natural disambiguation. This disambig page only has two entries, one for wheat gluten, and one just for gluten, which also appears in Wheat. Not sure we need a disambiguation at all, but at the very least, the article specifically on wheat gluten is primary.   WP:TWODABS. This is a difficult one to provide quantitative internet evidence on, but a perusal of various search combinations shows that the primary usage of wheat gluten vis-à-vis food is for gluten of wheat in the context of gluten-free food, i.e. not the food product (seitan). For the food product, "seitan" seems more common, with "vital wheat gluten" showing up second.
