I do a TON of work on redirects and thus do not always check "What links here" when no article exists yet on a subject. Even if I had, though, I would still at the time have made the redirect, with my reasoning being as follows:
At the time I made the redirect, no Eric Larson article existed. So I redirected to Erik Larson, because the comic book artist's name is commonly misspelled as Erik. That was the correct decision at the time. I do not know anything about the Disney animator and cannot write an article about him. Once someone knowledgeable about Eric Larson (such as you) came along, you were able to change that redirect into an article, and not only that, but the redirect alerted you to another person with a very similar name and thus alerted to the need for a disambig message at the top of the article, which you nicely added. So, see, the redirect was good in the long run.
Anyway, thanks for writing up the article. Keep contributing to Wikipedia!
