Spas (Armenian: Սպաս) is a matzoon-based soup.[1][2] It is a traditional dish in Armenia.[1][2] Besides matzoon, the main ingredient are herbs, and hulled wheat berries (i.e. with husks removed).

Herbs, such as coriander, thyme, parsley, and sometimes mint, are added as well. Butter and regular onions, or fried onions are also often added to the soup for a richer taste. It can also be served with meatballs.[4][5]

Traditionally there are 3 major variations. The first variation uses rice instead of wheat berries , the second uses bulgur instead of wheat berries, and the third uses barley instead of wheat berries.[4]

This soup is traditionally served warm in the winter and chilled in the summer.[1][2]
